Garlicky Country Ribs

( 6 Servings )

3/4 cup Kikkoman Roasted Garlic Teriyaki
Marinade and Sauce
1 tablespoon dry sherry
3-1/2 pounds country-style pork ribs,
cut in 1-rib portions

Combine roasted garlic teriyaki sauce and sherry; pour over ribs in large plastic food storage bag. Press air out of bag; close top securely. Turn bag over several times to coat both sides of ribs. Refrigerate 1 hour; turn bag over and refrigerate 1 hour longer. Place drip pan with 1/2 inch water under grill; bank charcoal and prepare coals. Place ribs on grill over drip pan and cook 45 to 60 minutes, or until done, turning ribs over occassionally. (To bake: Place ribs, meaty side up, in large, shallow foil-lined baking pan. Bake in 325ºF oven 1-1/2 to 2 hours or until done, turning over every 30 minutes. During last 5 minutes of cooking time brush ribs with additional roasted garlic teriyaki sauce.

3# Rack of Pork Spares or Baby Back Ribs
Blackberry Blaze BBQ Sauce

Remove membrane off the back with a paper towel. Dry Rub Marinade the Ribs liberally in rib bag. Let sit overnight in refrigerator if time permits or just minutes before grilling. Pre-heat oven or Grill to 450ºF. Place ribs on shallow pan (not overlapping). Do not cover. Put ribs in oven, turn down to 250ºF. Cook for 1 1/2 hrs. Place Blackberry Blaze BBQ Sauce on ribs the last 20 minutes of cooking time, the sauce will caramelize. Ribs are done when they pull away from the ends of the bones. Leave thicker racks of Ribs in the oven for 15 minutes more. Remove ribs from oven and enjoy! Place in Brown paper bag to hold up to an hour in oven that is turned off.

On the Grill: Cook ribs indirectly from heat source. Use a Holland grill or something similar - or - turn on one side of the grill, place the ribs on the other side, this is similar to the indirect grilling technique. The key is to cook them slow and not in direct flames. Keep grill temperature at 250ºF - 275ºF for 1-1/2 - 2 hours, or until meat pulls away from the ends of the bones. (Thicker ribs will need 2 hours.) Enjoy!
